Residing in a beautiful Copenhagen house from 1819, it's been nearly a year since Norrlyst’s sister restaurant, Theo, opened its doors. The chefs create contemporary European dishes inspired by their favorite spots in London, Barcelona, and Paris. They use ingredients from small Danish farms, and the kitchen is led by Emil Eshardt, who has a background from Kadeau and AOC. The food is so good that just three months after opening, the restaurant found its way onto Berlingske's favorite list, and with good reason.

Taste beef tenderloin tartare with romesco, pickled shallots, parsley mayo, and fried capers, served with Øland bread doused in garlic butter. Enjoy pan-seared hake with grilled cabbage, browned butter, and crispy tart crust, accompanied by pickled pearl onions. Delight in baked plums with milk ice cream, marzipan cake, Norwegian brown cheese mousse, and blackcurrants. Vegetarian alternatives are always available.

The restaurant is adorned with raw wooden floors, carpenter chairs, and bright, plastered walls, juxtaposed with tables painted in trendy bold colors. The style is contemporary and the atmosphere is informal. At Theo, they work with farmers who value animal welfare, sustainability, and organic practices. They source meat and poultry from Himmerland and Hopballe Mølle. Vegetables are organically grown at Kiselgården, and fish are caught in Scandinavian waters. Here, the chefs don't adhere to dogmas; instead, they draw inspiration from various kitchens and the dishes they themselves enjoy.
