Pick whatever you like at Kora in Sunnyside — Filipino flavors fill fried brioche doughnuts, flaky croissants, and a pastry case that draws a crowd

A doughnut filled with ube custard can get people talking. At Kora, it helped build a 10,000-person waitlist. Last year, Eleven Madison Park alum Kimberly Camara and Kevin Borja moved their pop-up into a permanent Sunnyside café and bakery, where they give their following plenty more than doughnuts to chew on.

Leche flan made from chef Camara’s grandmother’s recipe crowns a fried brioche doughnut. The ensaymada croissant gives the Filipino sweet bread a laminated spin, finished with a cloud of sugared butter and Edam cheese. Spam and pimento cheese fill pain suisse, while adobo-caramelized onions top focaccia. Seasonal cravings bring sweet corn old-fashioneds and caramelized sweet potato danishes. Drinks get the same attention, from scratch-made black sesame lattes to spiced tamarind apple cider under brown butter cold foam.
