Pick whatever you like at Uni in City Center — Chef João Guedes brings live-fire cooking and peak-season produce to a centuries-old dining room
At Uni, chef João Guedes lets the ingredients lead. After honing his produce-first instincts at Michelin-starred Herdade do Esporão, the Portuguese chef took over the Copenhagen kitchen, where the menu now wanders from the Basque Country and the Mediterranean to Japan without ever losing sight of the season.
Oysters are sharpened with green apple and plum granité. Crisp potato mille-feuille is cloaked in smoked bagna càuda. Braised veal-cheek croquettes come with jus. From the grill, local sea bass is glossed with pil pil, free-range chicken is basted in koji butter, and dry-aged pork tomahawk meets fermented pepper sauce and chimichurri. Basque cheesecake pulls somewhere new with miso and rhubarb. The drinks roam just as freely: koji Martinis, yuzu-laced Americanos, and pours from some of Europe’s most exciting winemakers.
