Nothing in Copenhagen looks—or tastes—quite like Bar Moro, a restaurant that feels plucked from the Mediterranean and dropped into Nørrebro. Here, chef-owner Jonas Franck, formerly of Kong Hans and Geranium, distills years of experience into something personal.
Marble, candlelight, and warm wood frame a kitchen where Franck's cooking balances precision with comfort. An oyster arrives dressed with calamansi mignonette and elderflower. Scallop crudo is served in its shell with white currant, pickled coriander seeds, and mandarin oil. Shrimp toast is layered with achiote, ajo blanco, and lardo before grilled pork belly lands with shiso and browned butter jus. Milk ice cream with strawberries, honey vinegar, and bee pollen closes the meal.
