Sourdough given the time it needs and Italian ingredients across the board define this Nordvest institution. Since 2016, Behov has stayed true to crafting honest pizza without shortcuts.
Chef Emanuele d’Avino draws on his Neapolitan roots to create classic and gluten-free pizzas with equal intent. Calabrian ‘nduja, goat cheese, and eggplant are paired with fresh tomato and rucola. Wild boar sausage comes layered with mozzarella, walnuts, red sauce, and a drizzle of balsamic glaze. Potatoes, provola, and parmesan are fragranced with rosemary and truffle oil, while seasonal specials—like fior di latte with rapini, salsiccia, and chili oil—showcase the best ingredients of the moment.
Behov is named for the basic need to eat and drink for good reason. Great pizza is essential.
