A fiery open kitchen is at the center of this sourdough-fueled restaurant named after the elusive mother dough. Every day, Mother honors its namesake with wood-fired pizzas crafted from long-fermented doughs and topped with fine Tuscan imports. It all started 15 years ago, when Roman-born chef David Biffani first brought 100% natural, organic sourdough pizza to Copenhagen. Opened last April, his City Center expansion carries forward the high standards set by its sister restaurant in Kødbyen.
Mother’s commitment to exceptional Italian comforts shines in their Cocchi di Mamma menu. To start, marinated cherry tomatoes top crusty slices of sourdough. Then, an abundant platter of roasted, pickled, and braised vegetables celebrates the seasons alongside imported cold cuts, creamy ricotta, and fresh-baked focaccia. Finally, the main act—a pick of any of Mother’s pizzas, from the timeless Margherita to bold pizzas like bresaola finished with shaved parmesan and arugula.
