At Substans, chef-owner René Mammen has paved his own way to earning a Michelin star with a relaxed approach to refinement. Enjoy a 13-course menu at Substans. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Begin with foamed Elstar apple bouillon enriched with olive oil, followed by oysters layered with tomato chutney and celery granita. Enjoy a savory malt flour pastry filled with Havgus cheese, corn, and white currants. Taste grilled celery root steak with smoked clam emulsion. Then, savor squid poached in beurre monté, and Norwegian king crab atop semi-dried tomato and egg yolk cream. Feast on flounder with roasted fennel and yuzu kosho–infused beurre blanc. Relish charred cabbage sprouts swimming in clam and Loke cheese sauce. Bite into potato sourdough with charcoal-fired squash and smoky eggplant emulsion. Devour fire-grilled langoustine served with a gooseberry and dried parsnip sauce. Revel in 100-day-aged ribeye roasted kebab-style with slices of braised veal and served with a rhubarb-and-smoked-butter compote. For dessert, delight in a cleansing kefir sorbet with verbena-scented gooseberry granita, and a fermented rose hip parfait with fresh seasonal berries.
