Set inside a bakery powerhouse’s buzzing production hub, the newly opened Nyx Bageri offers a glimpse behind the scenes while serving up the same craftsmanship and flavor that made its sister shops – Ard, Enlil, and Byen’s Bedste 2025 nominee, Jato – local favorites. Step inside, and the warm aroma of freshly baked cardamom buns greets you. Just beyond the counter, mixers hum while croissants, cinnamon buns, and sourdough loaves emerge from the ovens. True to form, everything is rooted in Nordic tradition while keeping a foot firmly planted in the present: breads crafted with local Quartz Mølle flour, mousse cakes bursting with seasonal fruits. Tucked in an industrial zone just outside the city, a visit to Nyx Bageri feels like a secret, revealing the inner workings of a bakery redefining tradition.
WHAT YOU GET
Pick whatever you like at Nyx Bageri. The selection of pastries varies with the seasons, so you always have a new reason to stop by. Get a BMO with Thise butter and Vesterhavsost. Taste a fragrant cardamom bun, classic tebirkes, or laminated cinnamon bun. Take a bite of a flaky plain croissant, pain au chocolat, or twice-baked almond croissant. Savor a Gateau Marcel, a rich chocolate cake, or try a seasonal layer cake – like a vibrant black currant mousse cake filled with chocolate-hazelnut crunch and vanilla cheesecake. Enjoy a baguette layered with stracciatella, pesto, sun-dried tomatoes, and salami, or a grilled cheese sandwich with ham and dijon aioli. Nyx Bageri is the latest addition to a growing family of modern Nordic bakeries led by Simon Lund Clemmensen, Martin Sandgreen, and Mathias Poss. The trio’s journey began in 2018, when Simon and Mathias were baking from the Danish canon at a café in Lisbon. Martin, who first joined as a coffee connoisseur, unexpectedly fell in love with the art of baking. Simon took him under his wing, and the rest is history: Ard opened in Frederiksberg in 2022, swiftly earning a nod from The New York Times. The following year brought Enlil to Lyngby, and in October 2024, Jato opened in Amager. Today, Nyx Bageri blends the charm of its predecessors with the industrial edge of its working bakery HQ.
