5-course menu at FAR – The future of plant-driven cuisine is found in this intimate, 22-seat vegetarian restaurant in Vesterbro

Organic produce transforms into comforting dishes that defy categorization, and plates of raw, preserved, and lacto-fermented vegetables celebrate the meeting of past and present seasons. At FAR, the best way to cook vegetables is to understand where they come from. So the menu is built around what local farmers and foragers bring through FAR’s doors. Shortly after opening, Politiken praised their inventive take on the plant-forward format, calling it “the green kitchen of the future.” With backgrounds at Pauli and No. 30, the team has created a restaurant that buzzes with the energy of a friend’s wine-fuelled house party – where the seasons, the people, and the plates are always in conversation.

WHAT YOU GET

Enjoy a 5-course menu at FAR. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Start with a plate of crudités and fermented vegetables served with gochujang chili crunch for dipping. Then, taste confit tomatoes with fresh plums and a drizzle of thyme oil, followed by poached turnips served with fermented garlic tartar sauce, toasted hazelnuts, and blackberries. Get smoked cauliflower with peas, shaved fennel, and pickled mirabelles atop a corn-whiskey emulsion. Savor tender potatoes and roasted onion, bathed in caramelized goat cheese and garnished with wasabi flower, shiso, and toasted buckwheat.

Named after founders Rasmus Faber Thomsen and Thor Birkedal Andersen’s late fathers, FAR is an intimate meditation on origins: where we come from, where we grow, and where our food does too. The tiny restaurant on Vesterbrogade opened in summer 2024 as the natural evolution of 3100, the duo’s former wine-bar-turned-hyperseasonal vegetarian kitchen. When Thomsen and Andersen aren’t behind the bar or at the stove, they’re teaching workshops on fermentation and the promise of regenerative agriculture, continuing their mission to connect people, produce, and place.
