Opened this summer to the fanfare of chefs and those in the know, Botschaft boldly tells its story of Alpine cuisine, provoking purists. Its German founders – Jonas Keller and Jan Hugel, ex–Wine Director of Fiskebar and co-founder of Otto in Berlin – nod to the past while stepping into something new. Here, elevated dishes of schnitzel, spätzle, and cheese-stuffed Austrian sausages leave the kitchen with care, framed by custom-built woodwork interiors. Meanwhile, a moody back bar pairs highballs with playful bar snacks and browned butter ice cream crowned with caviar. Catering to both the homesick and the curiously hungry, Botschaft proves that traditions are best served as inspiration, never a boundary.

WHAT YOU GET

Pick whatever you like at Botschaft. Dine on the sunny terrace, cozy up inside with a view of the open kitchen, or grab a seat at the bar. Start things off with fresh oysters dotted with pear ketchup, roasted bone marrow topped with pineapple and ham, and sturgeon caviar sourced straight from the Alps. Taste schupfnudeln, a German-style gnocchi with chanterelles, fresh peas, and fermented white asparagus beurre blanc. Savor a show-stopping maultasche, a large dumpling filled with pork, doused in rich onion broth, and finished with horseradish and a drizzle of brown butter. Get bell pepper-glazed poussin, served with a salad of chicken hearts and pickled peppers, and finished with chicken jus and lemon thyme; or potato rösti topped with braised apples. Discover desserts like kaiserschmarrn – tender pieces of fried dough served with strawberries and pear-caramel ice cream – and eierschecke, a rich German cheesecake topped with caviar. Or finish your evening with a selection of Swiss cheeses to complement the tightly curated wine list, an espresso doppio from the full coffee bar, or a negroni nightcap.

+ ABOUT

Botschaft was seemingly always in the cards for friends and co-owners Jonas Keller and Jan Hugel. The German-born duo first met four years ago at Kødbyens Fiskebar, where Jan was heading the restaurant’s legendary wine program, and Jonas was a visiting chef gearing up for a move to Copenhagen. The two bonded in their native language over a shared affinity for Slovenian wines and remained close ever since. When a space opened up on Ryesgade last year, a concept that hit closer to home was a no-brainer – so was enlisting Head Chef Lenny Hochhauser of Mural in Munich to bring the recipes of their grandmothers into the present. The result defies the borders and traditions of Alpine cuisine, forging a well-earned space in its culinary zeitgeist.
