Pick any two pizzas at Behov in Nordvest – One of Copenhagen’s pioneering pizza bars remains at the top of its game

The dough is cold-fermented for 48 hours, and the sauces are made from scratch. Pizzas are topped with cheeses, cured meats, and crushed tomatoes imported from Napoli. Head chef Emanuele d'Avino’s family hails from the storied birthplace of the Margherita, and at Behov, he channels the spirit of his motherland’s artisan pizzerias. When Behov first opened in 2016, it ushered in a new era of pizza in Denmark, made with Italian ingredients and no fuss. Today, its sun-drenched patio and lively pizza bar stay filled with Copenhageners satisfying their primal need for handcrafted pizza done right.

WHAT YOU GET

Pick any two pizzas at Behov. Snag a seat inside, relax on the patio, or take your order to go. Choose between classic, whole-grain, and gluten-free crust for your base. Opt for an Obelix with tomato sauce, mozzarella, wild boar sausage, walnuts, and a drizzle of balsamic glaze. Go for something spicy, like a Storm with red sauce, goat cheese, Calabrian ‘nduja, and eggplant, finished with fresh tomato and rucola. Get a Kødløs with green sauce, pickled red onion, eggplant, red peppers, and a drizzle of chili oil. Bite into a Heldig Kartoffel with provola cheese, potatoes, rosemary, parmesan, and truffle oil. Feast on a Lunefuld with tomato sauce, mozzarella, prosciutto cotto, black olives, and grilled artichokes. Or, taste a seasonal pizza with fior di latte mozzarella, salsiccia, cherry tomatoes, and basil.

The saying goes ‘If you build it, they will come,’ and there’s no better example than Behov – named after the primary need to eat and drink. In 2016, they opened on an unassuming corner in Nordvest with the simple mission of bringing better pizza to Copenhagen. Barely into their first year, the likes of Politiken and the White Guide paid them high praise. Soon after, they were topping the lists of Denmark’s best pizza places. Fast-forward to 2025, and Behov hasn’t strayed from what led to its quick success: pizza that speaks for itself.
