7-course menu at Chiba – A fantastical dim sum experience unfolds across seven flavourful acts in Vesterbro

White drapery floats from the ceiling like acrobats suspended mid-motion. Below, beet-red dumplings and towering slices of pastel-hued pistachio cheesecake adorn sleek steel tables. At first glance, Chiba doesn’t look like your typical dim sum spot, but the scents and sounds of the kitchen evoke the comfort of the familiar. Here, chef and owner Nickie Mydung stays true to tradition – and herself. Her dishes are steeped in memory of the Chinese food she was raised on, but arrive with modern finesse: orange chicken is scented with kumquat and vanilla, wontons swim in red curry sauce. At Chiba, the cuisine doesn’t strictly adhere to tradition; it daringly and personally reinterprets it.

WHAT YOU GET

Enjoy a 7-course menu at Chiba. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Begin with salmon sashimi dressed in yuzu-soy dressing. Then, savor dumplings stuffed with King prawn and bamboo shoots, chicken-mushroom shumai, and wontons in red curry sauce. Bite into crispy spring rolls stuffed with crab meat, black mushrooms, and vermicelli, fried until golden. Taste Peking duck chiu chow garnished with peanuts, cilantro, and spring onion. Eat spicy hand-cut noodles tossed in caramelized peanut-chili sauce before easing into wok-fried mains like fragrant black pepper beef and orange chicken infused with vanilla and kumquat. For dessert, indulge in a slice of creamy pistachio basque cheesecake.

Restaurateur Nickie Mydung grew up behind the counter of her mother’s Chinese restaurant in Odense. Years later, she became a force in the Copenhagen food scene, establishing District Tonkin and BUKA before moving onto more nostalgic pursuits: heartfelt homages to the Chinese dishes she was raised on. In November 2024, she opened Chiba in Vesterbro, pairing dumplings with DJ sets and playful cocktails. The unique concept is an extension of Nickie’s cooking – full of personality, timeless, and a medium for bringing people together.
