A redefining culinary experience awaits in the pulsing heart of ÅBEN’s Kødbyen brewery. What began as a rotating pop-up kitchen is now a full-fledged tasting experience, re-envisioning the expectations of seasonal fare. Here, you will taste imaginative expressions of the summer between towering fermentation tanks. Renowned chef Thomas Wetle Andersen leads the open kitchen, a culinary playground where experimentation and razor-sharp technique reign supreme. Meanwhile, his team of gastronomic alchemists transforms local and seasonal ingredients – fermenting, grilling, emulsifying, and reimagining them into bold dishes that blur the line between brewery casual and fine dining artistry.

WHAT YOU GET

Enjoy a 5-course menu at ÅBEN’s restaurant in Kødbyen. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Bite into grilled Brazilian cheese bread served with fermented rosehip butter and brined green tomato salsa. Taste savory æbleskiver – a sourdough-based and beer-battered take on the classic – with smoked cream cheese, semi-dried tomatoes, lumpfish roe, and wild garlic capers. Get veal tartare tossed with almond oil and yuzu, topped with black garlic aioli and finished with a mussel and juniper foam. Savor crispy chicken thighs, grilled and glazed with a reduction of rhubarb juice, umeshu, and gochujang, then served with poached rhubarb and crème fraîche blanquette. For dessert, indulge in caramelized white chocolate ganache infused with lemon verbena, paired with yogurt sorbet, wood sorrel granita, and dehydrated honey.
