OUR STORY: FROM BREAD WASTE TO PASTA

We’re Eat Wasted and we’re on a mission to feed people food waste.

Globally, one-third of all food produced is wasted, while nearly one billion people face severe food insecurity.

Bread is the world's most wasted food, so we asked ourselves, how can we turn it into a delicious new product?

We started by buying a small Italian pasta machine and got to work developing a recipe. After over a year of testing, we cracked the code for making pasta from bread waste with the same 'al dente' bite as traditional pasta and even more flavor.

But, for our pasta to make an impact, we need people to eat it! In the summer of 2022, we hosted our first Wasted dinner for 10 of our closest friends. Since then, we’ve dished up hundreds and even thousands of bowls of bread waste pasta at sold-out events in Copenhagen and other cities around the world.

Now, we need your help putting Wasted Pasta on even more plates – including yours.

WHAT YOU GET

The Co-Founder project ends on November 16, 2024, or when all rewards are sold out – whichever comes first.
All rewards will be delivered as promised – every krone/dollar/euro counts, whether the ambitious fundraising goal is reached or not.

CONDITIONS

+ How is Wasted Pasta made and what are the ingredients?

We collect bread waste from high-quality large-scale bakeries, dry it, and turn it into flour that is then used as an ingredient in our pasta.

Wasted Pasta consists of 25% bread waste (flour, salt, yeast). The remaining ingredients are durum wheat flour, Manitoba wheat flour, and vital wheat gluten flour. No binders, additives, preservatives, or animal products are added.

After being extruded through traditional bronze dies, the pasta is dried at low temperatures.

+ How much % bread waste is in Wasted Pasta?

Wasted Pasta consists of 25% bread waste. This percentage allows us to save huge volumes of waste while producing a product almost identical to traditional pasta.

+ Where do you get the bread waste?

How do you ensure it is food-safe?

We collect bread waste from high-quality large-scale bakeries in the region surrounding our pasta production facility.

The bread we collect is destined for the bin due to changing order volumes, irregular shape, or incorrect baking times. This bread is frozen within 24 hours of being baked, which means the bread waste we use is likely fresher than the bread you would find in the grocery store.

+ What shape of pasta will I receive?

You will receive Casarecce, a short twisted shape great for holding all kinds of sauces! It’s also one of the Wasted community's favorite shapes.

+ How much pasta is a portion?

One portion of pasta is 100g/3.5 oz.

+ Why are you pre-selling the product?

As a small business, pre-selling the product helps us fund our first production run, invest in sustainable packaging, and produce only the amount of pasta we need.

+ Is Wasted Pasta gluten-free?

No. We don’t currently produce any gluten-free products.

+ Is Wasted Pasta vegan?

Yes. Wasted Pasta does not contain any eggs or other animal products.

+ How does your donation model work?

For each kilogram of pasta we sell, we donate one portion to our non-profit partner, Food for Soul.

Founded by Chef Massimo Bottura and Lara Gilmore, Food for Soul's mission to prevent food waste and social isolation has inspired a global cultural movement of changemakers working together to build a more sustainable, inclusive food system. Through grassroots collaborations, their Refettorio Network of Partners transforms imperfect and surplus ingredients into nourishing meals served around the table to vulnerable communities with hospitality and dignity. Collectively, the Refettorio Network has helped recover more than 2100 tonnes of food from landfills, saving 9.22 kilograms of CO2 carbon emissions and serving 3.59 million meals to those in need.

Pasta donations will be given directly to local Refettorio social kitchens in select cities around the world.

+ When will my order arrive?

Your order will arrive during Spring 2025 unless otherwise noted.

+ Will you share the recipe for making bread waste pasta at home?

We’re working on a simpler open-source recipe for making fresh bread waste pasta at home, which we plan to publish in 2025.

+ What’s the shelf life of Wasted Pasta?

Wasted Pasta has a shelf life of 3 years.

+ What is the environmental impact of Wasted Pasta?

By repurposing surplus bread and keeping it within the food system, we preserve valuable resources such as water, energy, and labor. When bread is discarded into landfills, it not only represents a waste of these resources but also produces methane, a greenhouse gas with 25 times the global warming potential of carbon dioxide. By diverting bread from landfills, we actively contribute to reducing harmful emissions.

We’re still in the process of completing a full lifecycle analysis of our supply chain and production processes.
