The ‘Olsen Boys’ as they’re known around town have shown their stuff on the Copenhagen food scene since the 1990s. Restaurateurs Kristian Willumsen and Jakob Blom have decades of experience under their belts, but the young, ambitious chefs and sommeliers at their restaurant Holly don’t – and that’s part of what makes it a hotspot. The up-and-coming chef team has cut their teeth in the kitchens of Formel B, Fasangården, Janice, and Judie, just to name a few, and at Holly, they have free reign. With a modern culinary approach, stellar wine selection, vibrant atmosphere, and dreamy back patio perfect for sunny summer days, restaurant Holly is an all-around hit.


Enjoy a 7-course menu at Holly. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Start off with fresh fennel, radishes, baby carrots, and seasonal greens from Kiselgaarden served with an Asian-inspired dipping sauce of peanut butter, coriander, star anise, and green chilis. Bite into barbecued flatbread with Søtofte cream cheese, ramson oil, and fresh herbs. Taste raw Danish mackerel with cucumber, yuzu kosho seasoning, and kombu. Savor soy-marinated grilled chicken and white asparagus, grilled baby lettuce with tonnato sauce, and new potatoes with lovage cream and trout roe. For dessert, delight in yuzu-pickled rhubarb with yogurt sorbet, Chantilly cream, and a Sablé Breton cookie.

Restaurant Holly has an eclectic, youthful energy, and that’s exactly what sets it apart. A hybrid between an upscale bistro, wine bar, and buzzy hangout, this place sets the mood for a spirited evening in Vesterbro. Restaurant manager Anders Damsgaard is a trained sommelier with an eye for new producers, making the wine selection and service as dynamic as the restaurant’s talented team. The kitchen is led by chef Carl Erik Blom, who has a love for the cuisines of Asia, and chef Anton Mosegaard, who draws inspiration from Italy. Awarding five out of six stars, Berlingske was blown away by the bold flavors at Holly, and you will be too.
