For two consecutive years, they have been honored by Michelin, and they are among only 15 restaurants in Denmark to hold the Bib Gourmand status. Ole Troelsø highlighted Norrlyst as one of Denmark's best smørrebrød restaurants. At Norrlyst, their smørrebrød menu changes with the seasons, and their approach is experimental. The chefs take inspiration from the classics, but they also reimagine and refine them. Located in a beautiful half-timbered house in City Center, the kitchen is led by Emil Eshardt, whose background includes Søllerød Kro, Kadeau, and AOC.

WHAT YOU GET

Get 2 pieces of smørrebrød at Norrlyst in City Center. You have free choice from the entire smørrebrød menu, which varies by season. Taste beef tenderloin tartare with salted almonds, horseradish cream, ramsons, and rye bread crumble. Try cold-smoked Icelandic salmon with grilled beefsteak tomato, smoked cheese, and dried beetroot. Indulge in chicken salad with pickled beech mushrooms and lovage, topped with crispy chicken skin. Go for Danish potatoes with salted gooseberries, potato cream, and freshly shaved Vesterhavs cheese. Have Christiansø maiden's spicy herring with kale, miso mayo, and lingonberries. Savor pan-fried chanterelles with truffle purée and roasted Piemonte hazelnuts, or feast on flounder fried in rye flour, served with grilled romaine lettuce and mustard shoots.

At Norrlyst, the ingredients speak for themselves. The chefs pick wild herbs north of Copenhagen. They source meat and poultry from Grambogård and Hopballe Mølle. The vegetables are organically grown at Kiselgården, and the cold-smoked Vestfjord salmon might be the world's best. They work with small Danish farms that prioritize animal welfare, sustainability, and ecology, and the smørrebrød tastes fantastic as a result. Pairings can be anything from world-class beers to housemade snaps. Residing right in the heart of Copenhagen, this beautiful half-timbered house from 1799 has been renovated with a deep respect for its history, much like the smørrebrød themselves.
