Danish bakery nostalgia is in practiced hands at Københavns Bageri. Noma alum Rasmus Sjødahl revisits the baking he grew up with, bringing carefully sourced ingredients and plenty of attention to familiar favorites. A visit to the Carlsberg Byen counter brings you into the bakery itself, where brunsviger and sourdough leave the ovens as bakers shape the next batch.
Croissants shatter, soft cardamom buns pull apart, and laminated cinnamon swirls invite an espresso alongside. Sourdough buns come with Vesterhavsost and a generous helping of Thise butter. The signature kringle wraps vanilla remonce, brandy-soaked prunes, and cardamom in croissant dough, while spandauer, honninghjerter, and flødeboller keep the classics coming.
