Pick whatever you like at Botschaft in Nørrebro — Fresh off a Michelin Bib Gourmand, German and Austrian cuisine enters a bold new era
The next chapters of German and Austrian cuisine are unfolding in Nørrebro. Just a year after opening, Botschaft earned a Michelin Bib Gourmand for daring to prove exactly that. Together with Head Chef Lenny Hochhauser, founders Jonas Keller and Jan Hugel revisit the comforts of their youth with a little irreverence and a helping of caviar.
Kys oysters arrive with bell pepper juice, sour cream, and chives. Potato terrine wears a crown of crème fraîche, chives, and Alpenkaviar. Maultasche rests in onion broth with horseradish and brown butter. Confit trout meets white asparagus beurre blanc, while braised lamb arrives on a ragout of peas and kohlrabi with garlic beurre monté. Kaiserschmarrn lands with rhubarb and buttermilk ice cream as tightly curated wines and German beers carry the weight of butter, broth, and memory.
Nostalgia isn’t the destination in this rule-breaking dining room. It’s the starting line.
