11 servings at MARAIS in Aarhus City Center — The neo-bistro where Levantine traditions, French technique, and seasonal produce share the plate
Shawarma rarely begins with bavette steak. At MARAIS, it wouldn't make sense any other way. Inspired by years of wandering Paris' Marais district, industry veterans Jakob Kristian Sørensen, Stine Ilona Eilertzen, and their son Oscar set out to capture its easy coexistence of bistros, falafel shops, and natural wine bars back home in Aarhus.
Flame-grilled bavette is marinated with cumin, cinnamon, and za'atar before being folded into flatbread. Labneh is cold-smoked and finished with seasonal ferments and chili crisp. Fried calamari arrives dusted with za'atar and sumac. Hummus is made from Danish Ingrid peas. Basque cheesecake takes its cues from baklava, finished with rose syrup and sugared pistachios.
The influence is unmistakable. The cooking belongs entirely to Marais.
