Takashi Saito brings a New Nordic mindset and a finely tuned instinct for umami to his onigiri spot on Vesterbrogade. Each rice ball is treated with the same precision he brings to his Japanese-inspired restaurant, Uni, coaxing depth from Nordic fish, seasonal produce, and premium Japanese rice.
Drop by and choose any three: smoked fish folded with Japanese mayo and topped with green tea and toasted brown rice. Caramelized miso-glazed celeriac that channels the sweet-savory richness of nasu dengaku. Grilled oyster mushrooms with local seaweed, layered with dried shiitake and nori for a full-spectrum hit of the sea. Or preserved Japanese plum paired with kombu tsukudani, tied together with sakura-sencha tea.
