7-course menu at Tiger Lily in Papirøen — A former Michelin chef leads this colorful canalside restaurant with Pan-Asian expressions and fine dining flair

At Tiger Lily, East meets West long before the first course arrives. Set along the water in Papirøen, the restaurant is chef Stephan Erletz’s playground—a place where the flavors of Thailand, Vietnam, South Korea, and China meet the fire of an open kitchen and the touch of a former Michelin chef.

Taste a series of layered Pan-Asian expressions. A bright, herbal amuse-bouche of betel leaf and prawn kicks things off. Hamachi sashimi lifted with green nuoc cham, crunchy lo-mein salad, and caramelized pork-and-pineapple bites follow. From there, the flavor deepens with crisped duck sauced with tangerine and star-anise jus, Thai BBQ–glazed pork belly, and sautéed black-pepper broccoli rabe with peanut crunch. Dessert lands with coconut tapioca pudding, passionfruit sorbet, and a drizzle of pandan-coconut sauce.

Pan-Asian flavors get a fresh voice at Tiger Lily. Canalside in Copenhagen, yet entirely its own.
