5-course menu at Arnfeldt — A former Michelin chef from France brings the flavors of Paris and the bounty of Ærø to a corner of Østerbro
Ærø’s beloved farm-and-sea-to-table restaurant might be Østerbro’s best-kept secret. Arnfeldt is the creation of French-born chef Ariel Calabrese (Arpège, Sola) and Manja Mikkelsen. When their seaside inn on Ærø falls into hibernation, they bring the warmth of Franco-Danish hospitality to Copenhagen. Their Østerbro outpost quickly drew attention when it opened last year—and their signature dish left critic Søren Frank speechless.
At Arnfeldt, each menu is a dialogue between the French kitchen and Ærø’s island bounty, accented by an undeniably Japanese touch. Rømø oysters arrive bathed in dashi and rice vinegar. Dry-aged kingfish sashimi rests atop bergamot ponzu. Oeufs mayonnaise are reimagined with fried shrimp–chili crunch, toasted nori, and pickled mustard seeds. Slow-roasted lamb is served with miso-celery mousse. A dark chocolate tart with pumpkin seed praline and gochujang caramel fittingly ends a menu that blurs boundaries with confident ease.
