7-course menu at Apollo — Chef Frederik Bille Brahe’s Nyhavn restaurant remains as iconic as ever

At Apollo, chef Frederik Bille Brahe continues to refine the poetry of modern Copenhagen dining, a story he first began over a decade ago at Atelier September. The artistry that defines Apollo has sharpened since its 2017 debut, evolving season by season, much like the effortlessly fashionable crowds that fill its haute cuisine home.

In the open kitchen, Bille Brahe’s Scandi sensibility and French training meet the Japanese roots of chef Yuta Kurahashi, and something magical quietly unfolds: Cold-smoked salmon arrives dressed in brown butter ponzu. Jammy soft-boiled eggs are bathed in rich pistachio cream. Radicchio is flayed and reassembled into a sculptural salad with hibiscus dressing and roasted beets. And to close: milk soft serve, simple and pure, finished with whatever the season allows.
